The short answer
Both attack the same problem, which is current flowing on the outside of your coax braid and turning the feedline into part of the antenna. A current balun at the feed point stops it where it starts and is the more effective single measure. Snap-on ferrites on cables in the shack stop the symptoms reaching your equipment and your neighbours. If you have RF in the shack, fit the balun first, then the ferrites.

A current balun at the feed point presents a high impedance to common mode current, so the outside of the braid stops carrying antenna current. That improves the pattern, reduces noise picked up by the feedline, and stops RF finding its way back to the operating position.
Make sure it really is a current balun. Many inexpensive units labelled as baluns are voltage types, which do the impedance job but choke very little. Also check the power rating against your mode, because a choke that is fine on intermittent voice can heat significantly on a long digital transmission.

What are the symptoms of common mode current?
RF in the shack is the classic one: a microphone that bites, a radio that resets on transmit, a computer that locks up, or an SWR reading that changes when you touch the equipment. On receive, a feedline carrying common mode current acts as an antenna for household noise, so the noise floor is higher than it should be.
How many ferrite cores do I need?
Enough to raise the impedance at the frequency concerned, which usually means several, and passing the cable through each core more than once multiplies the effect substantially. A string of cores near the equipment end of a cable is a common arrangement. Judge by measurement or by whether the symptom goes away.
Will this fix my noise problem?
It fixes the part of the problem that arrives on the feedline or on cables, which is often a large part. It will not fix a noise source in your house or a neighbour's, which needs finding by switching things off one at a time or by hunting with a portable receiver. Chokes and hunting together solve most cases.
Does a choke reduce my transmitted power?
Not meaningfully. A properly chosen choke presents a high impedance to common mode current while having almost no effect on the differential signal travelling inside the coax. If a choke gets hot, that is a sign that it is dissipating power, and it is either the wrong material or under-rated for your mode.
